With the ODT, are you forced to download the whole Office installation every time you want to update the clients? It seems like this is how it is designed, but the clients will only update the necessary files even though you have to download the full installation.

That is absolutely true! Out of curiosity, do you run these updates once a month when Microsoft releases them? I'm not entirely sure how often Office 2016 receives it's updates to be honest. Like I said, I don't like it, but it's better than having all the machines pull direct from MS without any control at all.
